Mjor potto ntioxidnts re polyphenols nd L-scorbic cid. These compounds re principlly soluble in wter like to lesser degree contined selenium. Among ntioxidnts soluble in lipids, pottoes contined crotenoids, α-tocopherol nd α-lipoic cid [LACHMAN, HAMOUZ 2005]. Pottoes with purple-coloured peels nd flesh re new for consumers, nd contin nturl nthocynin pigments. The first such cultivr (Vlfi) ws registered in the Czech Republic in 2005 [ŠULC et l. 2007]. Purple-fleshed cultivrs hve ccording to the literture references, higher ntioxidnt tuber ctivity s compred to trditionl yellowfleshed cultivrs [REYES et l. 2005]; it is relted to the content of nthocynin pigments [BROWN 2005; BROWN et l. 2005]. Min nthocynin glycosides, which contribute to the ntioxidnt properties of purple-fleshed pottoes re glycosides of peonidin, petunidin nd mlvidin, wheres in purple-fleshed pottoes glycosides of pelrgonidin previl [BROWN 2004]. The trget of this work ws to compre the ntioxidnt ctivity (AA) determined in some purple or red-fleshed cultivrs with its vlues in common yellow-fleshed pottoes. The other im ws to determine the impct of climtic conditions in individul loclities with different levels bove the se on the ntioxidnt ctivity of tubers. Then the solution ws centrifuged (5 min, 7 000 g), filtered (25 µm) nd diluted with phosphte buffer to bsorbnce (t 0 ) 0.700 ± 0.01. Smple ddition ws 5 µl, time of rection 20 min. The bsorbnce of the solution ws mesured t the wvelength of λ = 734 nm.

[2005] bsed on the totl nthocynin trnsformtion to flvylium ction t ph of extrcts decresing to vlues between 0.5 nd 0.8 ws crried out. TAC ws expressed s cynidin (ε 1% 1 cm = 300; 523 nm). Results nd Discussion Tble 2 shows the pprent differences in AA of tubers between yellow, purple or red-fleshed cultivrs. Purple nd red-fleshed cultivrs showed significntly higher AA (in verge 2.9 times) in comprison to yellow-fleshed cultivrs. In ddition, REYES et l. [2005] obtined similr results. The highest AA vlue between purple-fleshed cultivrs ws determined in the cv. Violette (95.4 mg scorbic cid 100 g -1 FM = 100%), in the other purple-fleshed cultivrs the AA decresed Vitelotte 3.4%, Blue Congo 40.6%, Sld Blue 42.2% nd Vlfi 46.0%. In the red-fleshed cv. Highlnd Burgundy Red AA decresed s compred to the cv. Violette 27.7% nd the highest decrese ws shown by yellow-fleshed cv. Krin 71.9% nd Sturn 78.4%. Higher AA vlues of the cvs Violette nd Vitelotte s compred to other purple-fleshed cultivrs re obviously relted to their drker colour of the flesh nd to higher content of nthocynins, s described by BROWN [2004]. Other evidence of BROWN [2005] lso confirms our results nd ccording to them nthocynins could be tken together with chlorogenic cid nd cffeic cid for min potto contributors to AA. Between the yellow-fleshed cultivrs, the cv. Krin significntly exceeded the cv. Sturn in AA. The totl nthocynin content (TAC) ws determined in purple nd red-fleshed cultivrs. The highest vlues were determined in the cultivrs with the drkest flesh colour Violette nd Vitelotte nd further in the red-fleshed cv. Highlnd Burgundy Red (Fig. 1). These cultivrs t the sme time hd demonstrted the highest AA vlues nd TAC well correlted with them. The rnge of TAC between the cultivrs ws reltively tidy; vr. Blue Congo with the lowest content reching 29% of the vlue determined in the vr. Violette (64.1 mg per 100 g FM) with the highest TAC. In ddition, BROWN [2005] ttined the similr results nd showed TAC in purple nd red-fleshed pottoes within the rnge from 9 to 38 mg per 100 g FM. Our results re in greement with DELGADO et l. [2001], who determined highly positive correltions between the ntioxidnt cpcity nd nthocynin content nd totl polyhenol content nd consider the former compounds s the mjor source of ntioxidnt cpcity.

Linie pionowe wskzują wrtości błędu stndrdowego The present two-yer results did not confirm the impct of loction on AA of tubers (Fig. 2); the effect of the yer of cultivtion previled. A trend ws obsrved in 2006, when significntly lesser AA ws noted on the wrmest loction Přerov nd Lbem in the low ground longside the Lbe river however those observtions were not confirmed in 2007. Conclusions 1. Potto AA is demonstrbly ffected by the vrietl genotype. 2. Purple nd red-fleshed potto cultivrs showed on verge 2.9 times higher AA of tubers in comprison with yellow-fleshed pottoes. 3. Considerble differences of AA nd TAC ws found in the purple nd red-fleshed cultivrs, where the highest AA were noted in the cultivrs with high content of totl nthocynins. 4. The obtined results did not prove the impct of loction on AA of tubers. References

Istotne róŝnice AA występowły teŝ między odminmi o fioletowym lub czerwonym zbrwieniu miąŝszu.
