Streszczenie Celem zrealizowanych badań było podjęcie próby znalezienia związku między zawartością składników mineralnych w tkankach ryb (mięśnie, szkielety) i zastosowanych w żywieniu paszach jako podstawy do ewentualnego doskonalenia składu mineralnego przemysłowych mieszanek paszowych. Do badań wybrano karpia Cyprinus carpio L., brzanę Barbus barbus i pstrąga tęczowego Oncorhynchus mykiss. Analizie poddano łącznie 373 ryby: 107 karpi, 146 pstrągów i 120 sztuk brzany. Zwierzęta pochodziły z dwóch ośrodków rybackich położonych w zlewniach Odry oraz Nidy i żywione były takimi samymi pełnoporcjowymi mieszankami przemysłowymi dostosowanymi do wieku tych zwierząt. Aby uzyskać bogatszy materiał do analiz, badania przeprowadzono w dwóch sezonach (cyklach produkcyjnych), a w każdym z nich analizowano dwie grupy wiekowe. Uzyskane dane liczbowe potwierdziły istotną zmienność (P<0,01 i P<0,05 oraz wysokie wartości SEM) gatunkową, wiekową, sezonową, a nawet osobniczą w zawartości makro- i mikroelementów w mięśniach i szkieletach karpia, brzany i pstrąga tęczowego, karmionych tymi samymi paszami przemysłowymi. Stwierdzono zasadniczą odmienność proporcji składników mineralnych w tkankach ryb i mieszankach paszowych użytych w żywieniu, co wskazywać by mogło na fakt, że ilości pierwiastków nieorganicznych w tych paszach nie były precyzyjnie bilansowane w stosunku do zapotrzebowania ryb. Na podstawie uzyskanych rezultatów wprowadzo uszeregowanie pierwiastków pod względem ich zawartości, od najwyższej do najniższej ilości. W mięśniach dane te kształtowały się następująco: karp w wieku 3 miesięcy: P > K > Ca > Na > Mg; 12 miesięcy: K > P > Ca Na > Mg, natomiast u obu grup wiekowych Fe > Mn Cu > Zn. Zawartość Mn i Cu była wyższa niż Fe i niższa niż Zn, jednak trudna do uszeregowania. W sezonie I u obu grup wiekowych ilość Cu była wyższa niż Mn, w sezonie II odwrotnie. U brzany: P > K > Ca > Na > Mg (obie grupy wiekowe) oraz Fe > Zn > Mn Cu u ryb 11 miesięcznych i Fe > Zn > Mn > Cu u 18 miesięcznych; pstrąg tęczowy: K > P > Ca > Na > Mg (u obu grup wiekowych) oraz Fe > Zn > Mn > Cu (7 miesięcy) i Fe > Zn u ryb 9- i 12-miesięcznych. Zawartość Mn i Cu była niższa niż Fe i Zn, ale niemożliwa do opisania jako prawidłowość. Sezon odchowu ryb był czynnikiem istotnie (p<0,01) modyfikującym skład mineralny tkanek ryb. W tkance mięśniowej wyjątkami, w których nie występowały różnice sezonowe, były: dla karpia Ca oraz Mn (Mn tylko między rybami 12-miesięcznymi); 5
dla brzany: Mg, P i Zn (ryby 11-miesięczne) i Ca, Na, Fe i Mn (ryby 18-miesięczne), a dla pstrąga Ca, Na, P i Fe u ryb 7-miesięcznych, u ryb starszych tylko Fe. Natomiast w szkieletach pierwiastki występowały ilościowo w kolejności: karp w wieku 3 miesięcy Ca > P > K > Na > Mg i Zn > Fe > Mn > Cu, natomiast u ryb 12 miesięcznych: Ca > P > K > Na Mg i Fe > Zn. Zawartość Mn i Cu była niższa niż Fe i Zn, ale niemożliwa do opisania jako prawidłowość. U brzany w wieku 11 miesięcy: Ca > P > K > Na > Mg i Cu > Mn. Zawartość Fe i Zn była wyższa niż Cu i Mn, ale niemożliwa do opisania jako prawidłowość, u ryb 18 miesięcznych: P > Ca > K Na > Mg i Fe > Zn > Mn > Cu. U pstrąga w wieku 7 miesięcy ranking wynosił Ca P > K > Na > Mg i Zn > Mn/Fe > Cu, poziom cynku w szkieletach był wyższy, a miedzi niższy niż zawartość manganu i żelaza, jednak ilość Mn i Fe nie była możliwa do opisania jako prawidłowość. U ryb 12 miesięcznych uszeregowanie pierwiastków było następujące: Ca > P > K > Na > Mg i Mn > Cu. Zawartość Mn i Cu była niższa niż Fe i Zn, ale niemożliwa do opisania jako prawidłowość. W szkieletach karpia jedynie dla ilości Ca nie stwierdzono różnic między sezonami. U brzany nieistotne różnice między sezonami stwierdzono u ryb starszych dla ilości Ca, K, P, Zn, Mn, a u ryb młodszych - dla zawartości K, Na i P. U pstrąga nieistotne różnice zanotowano między sezonami u ryb starszych dla ilości K, P, Cu, Mn, a dla ryb młodszych dla zawartości Ca, Na, P, Cu. W informacji (w treści etykiet umieszczonych na opakowaniach) charakteryzującej skład przemysłowych pasz nie podawano zawartości składników mineralnych, stąd nie można odnieść oznaczonych ilości makro- i mikroelementów z własnych badań, tzn. wykonanych w skarmianych mieszankach paszowych do zaleceń producentów. Zwrócono uwagę na wysoką wartość SD dla składników mineralnych i na małe wartości odchylenia standardowego dla zawartości białka ogólnego. Możliwość sterowania zasobnością mineralną produktu konsumpcyjnego mięsa ryb zwierząt żyjących w środowisku wodnym, wydaje się dyskusyjna. Mało znany jest stopień dostępności składników mineralnych pasz, co wymaga wykonania bardzo precyzyjnych badań przez dobrze wyposażone technicznie ośrodki badawcze. Summary The aim of the study was to try to find the relationship between the content of minerals in fish tissues (muscles, skeletons) and the feed used in nutrition as a basis for a possible improvement in the mineral composition of the compound feed. 3 species of fish were chosen for the research: common carp Cyprinus carpio L, barbel Barbus barbus and rainbow trout Oncorhynchus mykiss. Total of 373 fish were analyzed: 107 carp, 146 trout and 120 barbels. Animals came from two fishing centers located in the basins of the Oder and Nida rivers and were fed the same complete industrial mixtures adjusted to the age of the animals. To obtain richer material for analysis, the study was conducted in two seasons (production cycles), and in each of them two age groups were analyzed. The resulting figures confirmed the significant variation (P <0.01 and P <0.05, and high values SEM) in the content of macro- and micronutrients in the muscles and skeletons of carp, barbel and rainbow trout fed the same feed mixtures, both between species and between individuals, according to age and season. Essential differences in the proportion of minerals in the tissues of fish and in the feed mixtures used in nutrition have been found, which would indicate that the amount of inorganic elements in the feed was not precisely balanced in relation to the requirements of fish. On the basis of the results alignment of the elements was introduced in terms of their content, from highest to lowest quantity. In the muscles the data was as follows: carp at the age of 3 months: P> K> Ca> Na> Mg; 12 months: K> P> Ca Na> Mg and Fe > Mn Cu > Zn in both age groups; content of Mn and Cu washigher than Fe and lower than Zn, but hard to describe consistently. In season I in both age groups content of Cu was higher than Mn, in season II other way round. In barbell the order was as follows: P> K> Ca> Na> Mg (both age groups) and Fe> Zn> Mn Cu in 11 month old fish and Fe> Zn> Mn> Cu at 18 months; rainbow trout: K> P> Ca> Na> Mg (in both age groups) and Fe> Zn> Mn> Cu (7 months) and Fe> Zn in 9- and 12-month old fish. The content of Mn and Cu was lower than Fe and Zn, but impossible to describe consistently. Season of the fish rearing was a significant factor (P<0.01), modifying the mineral composition of fish tissues. The exceptions in muscle tissue with no seasonal differences were: for carp Ca and Mn (Mn only between 12-months old fish); for barbel: Mg, P and Zn (11-month-old fish) and Ca, Na, Fe and Mn (18-months old fish); for trout - Ca, Na, P and Fe in 7-month-old fish, older fish - only Fe. 7
In the skeletons, the elements aligned according to quantity in following order: carp at the age of 3 months Ca> P> K> Na> Mg and Zn> Fe> Mn> Cu, 12 months: Ca> P> K> Na Mg and Fe> Zn. The content of Mn and Cu was lower than Fe and Zn, but impossible to describe consistently; in barbel at the age of 11 months: Ca> P> K> Na> Mg and Cu> Mn. The content of Fe and Zn was higher than Cu and Mn, but impossible to describe consistently; 18 months old fish: P> Ca> K Na> Mg and Fe> Zn> Mn> Cu. In trout at the age of 7 months ranking was Ca P> K> Na> Mg and Zn> Mn / Fe> Cu, the level of zinc in the skeletons was higher and of copper lower than that of manganese and iron, but the amount of Mn and Fe could not be described consistently. In 12 months old fish the order of the elements was as follows: Ca> P> K> Na> Mg and Mn> Cu. The content of Mn and Cu was lower than Fe and Zn, but impossible to describe consistently. In the skeletons of carp there were no differences between the seasons only for the quantity of Ca. In barbel insignificant differences between seasons were observed in older fish for the amount of Ca, K, P, Zn, Mn, and in younger fish for the content of K, Na and P. In trout insignificant differences were noted between the seasons for older fish in the amount of K, P, Cu, Mn and younger fish for the content of Ca, Na, P, Cu. The information (content labels on packaging) characterizing the feed mixtures used did not mention the mineral content and therefore amounts of macro- and micronutrients obtained in own research (ie. carried in compound feed fed to the fish) cannot be compared with the manufacturer's instructions. The high value of the SD of minerals and small standard deviation for total protein content was notable. The ability to control mineral abundance in consumer products derived from animals living in the aquatic environment (fish meat), seems questionable. The degree of availability of minerals in feed is little known and requires more precise research, carried out in technologically well-equipped research centers.
